Three Sauces Recipes by Chefs from the Golf Course

As the Super Bowl approaches, home cooks are gearing up to create delicious game-day fare. A staple on the menu for many is wings, usually in classic Buffalo sauce. The Ritz-Carlton Reynolds Lake Oconee resort in Georgia and Gentle Creek Country Club in Dallas share their unique twist on wing sauces that are sure to be a hit at your Super Bowl party.

One creative twist on the classic Buffalo sauce is the Truffle Buffalo sauce from Gaby’s By the Lake at the Ritz-Carlton Reynolds Lake Oconee. This sauce combines the classic spicy flavor of Buffalo sauce with the savory, earthy quality of white and black truffles. Chef Justine Alexander emphasizes the importance of allowing the sauce to cool before adding the truffle oil to ensure the truffle flavor is prominent. Seasoning the wings generously and crisping up the skin is key to achieving the perfect wings to pair with this unique sauce.

Another interesting variation is the Honey Hot Buffalo sauce, also from Gaby’s By the Lake. This sauce uses locally-sourced honey infused with Scotch bonnet and habanero peppers to add a sweet heat to the classic Buffalo flavor. The key to the perfect balance of sweet and hot in this sauce is to use a good amount of it to coat the wings. The more sauce, the better, according to Chef Alexander.

At Gentle Creek Country Club, Chef Stephen Rego takes a Mediterranean-inspired approach with his Harissa Buffalo sauce. This sauce combines the bold and vibrant flavors of harissa, a red chili-based sauce from North Africa, with the classic Buffalo sauce. The richness of harissa adds depth and balance to the heat of the sauce, creating a unique twist on the familiar dish. Chef Rego also adds an “everything spice” topping for a crunchy texture.

To complement the spiciness of the Harissa wings, Chef Rego recommends a Greek yogurt and dill dipping sauce. The creamy texture of the yogurt balances out the heat of the harissa, bringing a refreshing contrast to the spicy wings. Whether you prefer to fry, grill, or use an air fryer to cook your wings, the Harissa Buffalo sauce is sure to add a flavorful kick to your game-day spread.
