Avoid this common mistake for foolproof mashed potatoes

Mashed potatoes are a quintessential comfort food and an essential side dish on the Thanksgiving table. In order to elevate your mashed potatoes to five-star status, there are several key steps and tips to keep in mind. Chef Kevin Humphreys recommends using Idaho Russet potatoes for the best results, thanks to their high starch content and fluffy texture. Yukon Gold potatoes are also a good option due to their buttery flavor and medium starch content.

When cooking the potatoes, it’s important to simmer them rather than boil them. Boiling can lead to overcooking and a gluey finished product, as the starch is pulled out of the vegetable. By simmering the potatoes in water over low heat, you can set the starch inside the potato and achieve a fluffy texture when mashed. Make sure to cut the potatoes into uniform pieces to ensure even cooking.

For a finer consistency in your mashed potatoes, consider using a potato ricer or food mill instead of a traditional masher. These tools help to create a smoother texture and remove any lumps. Additionally, if you choose to leave the potato skins on while cooking, a food mill or ricer makes it easy to separate the flesh from the peel.

The key ingredients for delicious mashed potatoes are butter and dairy. Chef Humphreys suggests a ratio of three-quarters of a pound of butter and one cup of heavy cream for six pounds of Idaho Russet potatoes. For Yukon Gold potatoes, he recommends starting with nine pounds of potatoes and adding three-quarters of a pound of butter, two cups of heavy cream, and three cups of sour cream. It’s important to have the butter melted and the cream warm before mixing them into the potatoes.

Once you have mastered the basic mashed potato recipe, the possibilities are endless for adding unique twists to the dish. Chef Humphreys recommends infusing cream with fresh herbs, like thyme or rosemary, and straining them out before blending with the potatoes. Whisking in cheeses, such as sharp white cheddar, is another flavorful option to consider. Get creative with your mashed potatoes and let your imagination guide you.

By following these simple yet crucial steps, you can create a bowl of mashed potatoes that will impress your guests and become a standout dish at any holiday gathering.
