A New England Chef’s Guide to Achieving Perfectly Seared Scallops

Scallops are a versatile seafood that can be cooked in various ways to achieve restaurant-quality results at home. Executive chef Omari Shaw of Willowbend Golf Club in Mashpee, Massachusetts, shares his tips on cooking scallops perfectly. When pan-searing or pan-roasting scallops, it is crucial to coat the sauté pan or skillet with oil and let it come up to temperature before adding the scallops. Seasoning the scallops with salt, pepper, olive oil, butter, and thyme before vacuum-sealing and cooking at 122 degrees for 30 to 40 minutes, followed by a quick sear, can produce delicious results.
